Our menu travels through eastern Yucatán, exploring its villages, culinary traditions and seasons. Each dish tells the story of a particular place: the smoking traditions of Temozón, the cheeses and dairy products of Sucilá, the day's catch from San Felipe, Espita's culinary heritage or the livestock traditions of Tizimín. Each region contributes its ingredients, techniques and distinctive way of approaching food. These encounters shape a menu that evolves with the seasons and the availability of local produce.
