Boutique Hotel Restaurant Casona los Cedros

Casona, one of Mexico’s most acclaimed restaurants, tucked away in Espita

A recognition that confirms years of work

In 2025, Casona was recognized by Culinaria Mexicana, one of Mexico’s leading culinary critics, among the country’s most acclaimed restaurants — a tribute to its contemporary, seasonal cuisine rooted in eastern Yucatán. This recognition crowns the work of chef Jorge Ildefonso, based in Espita, a still little-known village in the Yucatán. It also confirms a simple belief: great cuisine isn’t confined to big cities.

A contemporary cuisine rooted in its territory

At Casona, every dish tells the story of a specific region in eastern Yucatán. The distinctive smoking technique from Temozón, cheeses and dairy from Sucilá, the daily catch from San Felipe, Espita’s own culinary tradition, or the cattle-raising heritage of Tizimín: each region contributes its ingredients, its knowledge, and its own way of understanding food.

The kitchen follows the rhythm of the seasons. The work of local producers, fishermen, farmers, and artisans gives meaning to every dish. More than just a menu, it becomes a true invitation to discover eastern Yucatán, one village at a time.

Local produce and short supply chains, a genuine philosophy

Rather than sourcing ingredients from far away, the Casona team favors short supply chains: vegetables from the garden, fish caught the same day in San Felipe, cheese and dairy from Sucilá, meat from the Tizimín region. This closeness ensures both the freshness of the ingredients and a positive impact on the local economy.

A zero-waste commitment, still taking shape

Beyond the choice of ingredients, Casona is gradually moving toward a zero-waste approach in the kitchen. The team works to use every ingredient in its entirety, turning trimmings and peels into broths, condiments, or garnishes. This philosophy, still evolving, aims to reduce waste while fueling culinary creativity.

An experience to live in Espita

Located within the Casona los Cedros boutique hotel, the restaurant remains open to the public, though reservations are strongly recommended. Dining at Casona means stepping off Yucatán’s usual tourist trail, to discover a cuisine that has earned its place among the country’s culinary elite, far from the bustle of big cities.
